Ingredients

  • 10 sprigs fresh coriander, leaves and stems, plus extra leaves to garnish
  • 200 g fresh baby spinach
  • 1 tbsp coconut oil
  • 2 brown onions, cut into halves
  • 10 g fresh ginger
  • 5 garlic cloves
  • 1 fresh long red chilli
  • 2 tsp ground cumin
  • 2 tsp garam masala
  • 2 tsp ground coriander
  • ½ tsp chilli powder, mild, to taste
  • 400 g canned chopped tomatoes
  • 600 g lamb shoulder, cut into pieces (3-4 cm)
  • 1 tbsp Vegetable stock paste (see Tips)
  • sea salt, to taste
  • ground black pepper, to taste
  • 1 lime, juice only
  • 4 tbsp natural yoghurt, to serve
  • dried chilli flakes, to serve
