  • 2000 g water, plus extra for cooking noodles
  • 3 tsp caster sugar
  • ¾ tsp ground black pepper
  • 3 Tbsp light soy sauce
  • 4 Tbsp toasted sesame oil
  • 300 g beef fillet steak, cut in thin strips (approx. 1 cm x 5 cm)
  • 200 g carrots, cut in lengths (5 cm)
  • 150 g onion, halved
  • 150 g fresh button mushrooms
  • 2 medium eggs
  • 2 pinches fine sea salt, plus ½ tsp
  • 150 g fresh spinach leaves
  • 4 garlic cloves
  • 20 g vegetable oil
  • sesame seeds, toasted, for sprinkling
