Sweet Potatoes

- 4 - 5 sprigs fresh coriander leaves only, to taste

- 25 g lime juice
- 2 ripe avocados cut in pieces (5 cm)

Steak Fajita Mixture
- 2 - 3 garlic cloves to taste
- 20 g olive oil
- 150 g onions sliced (1 cm)
- 1 red pepper sliced (1 cm)
- 1 yellow pepper sliced (1 cm)
- 1 green pepper sliced (1 cm)
- 2 tsp ground coriander
- 2 tsp ground cumin
- 2 tsp smoked paprika
- 1 tsp chilli powder
- 1 tsp fine sea salt plus extra to taste
- 2 pinches ground black pepper plus extra to taste
- 450 g rump steak sliced against the grain (1 cm x 5 cm) (see tip)
