Ingredients

Sweet Potatoes

  • 6 sweet potatoes
  • olive oil to taste
  • fine sea salt to taste

Guacamole

  • 80 g onions quartered
  • 1 garlic clove
  • 4 - 5 sprigs fresh coriander leaves only, to taste
  • 150 g tomatoes quartered
  • 25 g lime juice
  • 2 ripe avocados cut in pieces (5 cm)
  • ½ tsp fine sea salt

Steak Fajita Mixture

  • 2 - 3 garlic cloves to taste
  • 20 g olive oil
  • 150 g onions sliced (1 cm)
  • 1 red pepper sliced (1 cm)
  • 1 yellow pepper sliced (1 cm)
  • 1 green pepper sliced (1 cm)
  • 2 tsp ground coriander
  • 2 tsp ground cumin
  • 2 tsp smoked paprika
  • 1 tsp chilli powder
  • 1 tsp fine sea salt plus extra to taste
  • 2 pinches ground black pepper plus extra to taste
  • 450 g rump steak sliced against the grain (1 cm x 5 cm) (see tip)

Assembly

  • fresh coriander leaves for garnishing
