Ingredients

Cake

  • 120 g unsalted butter softened and cut into pieces, plus extra to grease
  • 400 g canned kidney beans drained and rinsed (approx. 250 g after draining)
  • 1 tbsp strong brewed coffee (see Tips)
  • 1 tsp natural vanilla extract
  • 5 eggs
  • 140 g coconut sugar
  • 70 g cocoa powder
  • 1 tsp gluten free baking powder
  • ½ tsp bicarbonate of soda
  • ¼ tsp sea salt
  • 120 g dark chocolate (50% cocoa) broken into pieces

Swiss meringue topping

  • 100 g white sugar
  • 2 egg whites
  • 1 tsp natural vanilla extract
  • 1 tsp lemon juice
  • 1 pinch sea salt

Assembly

  • 250 g fresh strawberries hulled and sliced
