Ingredients

Dumpling wrappers

  • 1 egg yolk
  • 25 g water
  • 1 - 2 pinches salt

Pork and prawn filling

  • 80 g peeled raw prawns
  • 1 cm piece fresh ginger, peeled
  • 1 spring onion/shallot, trimmed and cut into thirds
  • 100 g pork mince
  • 1 tsp sesame oil
  • 1 tsp Chinese cooking wine
  • 2 tsp light soy sauce
  • 1 - 2 pinches white pepper
  • ¼ tsp cornflour, plus extra for dusting

Assembly

  • 500 g water, plus extra for brushing
