Ingredients

Pastry

  • 450 g plain flour, plus extra for dusting
  • 220 g unsalted butter, cold, diced
  • 1 tsp fine sea salt
  • 110 g water, ice cold

Filling

  • 1000 g water
  • 160 g long grain rice
  • 3 large eggs
  • 250 g echalion shallots, halved
  • 40 g unsalted butter, diced
  • 250 g fresh button mushrooms
  • 4 pinches fine sea salt
  • 1 pinch ground black pepper

Assembly

  • 1000 g fresh salmon fillet, skinless
