Ingredients

  • 40 g Parmesan cheese, crust removed and cut into pieces (3 cm)
  • 30 g olive oil
  • 150 g brown onion, cut into quarters
  • 200 g carrot, cut into pieces (3-4 cm)
  • 3 garlic cloves
  • 3 - 4 sprigs fresh basil, leaves only (approx. 20 g), plus extra for garnishing
  • 2 celery stalks, cut into pieces (3-4 cm)
  • 400 g canned tomatoes
  • 40 g white wine
  • 1 tbsp tomato paste
  • 1 tbsp dried oregano
  • ½ tsp sweet paprika
  • 800 g skinless chicken thigh fillets, cut into cubes (4 cm)
  • 1 tsp salt
  • ½ tsp ground black pepper, to season
  • 800 g canned cannellini beans, rinsed and drained (approx. 500 g after draining)
