Ingredients

Char siu marinade

  • 30 g piece fresh ginger, peeled
  • 5 garlic cloves
  • 60 g eschalots
  • 2 tsp Chinese five spice
  • 60 g hoi sin sauce
  • ½ tsp ground white pepper
  • 40 g water
  • 30 g molasses
  • 50 g Shaoxing wine
  • 40 g dark soy sauce
  • 1 tbsp tomato sauce
  • 500 g boneless skinless pork belly, cut into 3-4 pieces

Buns

  • 1 tbsp dried instant yeast
  • 300 g plain flour
  • 2 tsp baking powder
  • 50 g cornflour
  • 50 g caster sugar
  • 180 g warm water
  • 10 g vegetable oil

Char siu bao

  • 2 tbsp cornflour
  • 600 g water, plus extra as needed
  • 3 spring onions/shallots, white and light green part only, cut into pieces (1 cm)
  • 1 tbsp oyster sauce
  • 1 tbsp dark soy sauce
