Ingredients

Marinated steak

  • 500 g beef rump steak, partially frozen and cut into thin strips
  • 4 garlic cloves
  • 5 spring onions/shallots trimmed and cut into halves
  • 40 g palm sugar, roughly chopped
  • 80 g tamari
  • 50 g mirin
  • 1 tbsp sesame oil
  • 1 tbsp sesame seeds

Carrots with yoghurt dressing

  • 250 g carrots, peeled and cut into pieces (3-4 cm)
  • 300 g water
  • 2 tsp salt
  • 1 cm piece fresh ginger, peeled
  • 1 garlic clove
  • 2 tsp fish sauce
  • 10 g palm sugar, roughly chopped
  • ¼ tsp chilli powder
  • 40 g natural yoghurt
  • 1 tsp pure maple syrup

Ssamjang sauce

  • 1 garlic clove
  • 5 spring onions/shallots, trimmed and cut into halves
  • 40 g soy paste (or soy bean paste - see Tips)
  • 1 tbsp chilli paste (see Tips)
  • 2 tsp honey
  • 2 tsp sesame seeds
  • 2 tsp sesame oil

Assembly

  • oil, for brushing
  • 8 - 10 baby cos lettuce leaves
  • fresh mint, leaves only, for garnishing
