  • 800 g water, plus extra for boiling
  • 3 garlic cloves
  • 1 fresh long red chilli, deseeded and cut in long pieces
  • 1 tbsp potato starch
  • ½ tsp white sugar
  • ¼ tsp ground white pepper
  • ¼ tsp salt
  • 2 tbsp Chinese black bean sauce
  • 1 tbsp oyster sauce
  • 1 tbsp soy sauce
  • 1 tbsp rice wine vinegar
  • 1 - 2 spring onions/shallots, cut into slices, for garnishing
