  • 20 g garam masala
  • 20 g fine sea salt
  • 60 g desiccated coconut
  • 100 g blanched almonds
  • 5 garlic cloves
  • 80 g fresh root ginger, peeled, cut in round slices (2 mm)
  • 160 g vegetable oil
  • 150 g tomato purée
  • 80 g fresh red chillies
  • 2 bunches fresh coriander, in pieces, plus extra leaves for serving

Curry

  • 100 g onions, quartered
  • 10 g vegetable oil
  • 80 g raisins
  • 440 g tinned chopped tomatoes
  • 1000 g braising steak, cut in pieces (3 cm)
  • 50 g coconut cream
  • 40 g natural yoghurt, plus extra for serving
