Ingredients

  • 200 g red onion, cut into thin slices (1-2 mm)
  • 30 - 40 g red wine vinegar, to taste
  • 10 g fresh flat-leaf parsley, leaves only
  • 50 g extra virgin olive oil
  • ½ garlic clove (optional)
  • 40 g freshly squeezed lime juice
    or 40 g freshly squeezed lemon juice
  • ½ tsp salt, plus extra to taste
  • 1 pinch ground white pepper
  • 300 g water
  • 500 g peeled, large raw prawns, deveined (approx. 1 kg prawns in their shells)
  • 1 - 2 limes, cut into thin slices (2-3 mm)
    or 1 lemon, cut into thin slices (2-3 mm)
  • 200 g fennel, cut into thin slices (1-2 mm)
  • 400 g cherry tomato, cut into halves
