  • 1100 g water
  • 1 garlic clove
  • ¾ tsp fine sea salt
  • 400 g sweet potatoes cut in pieces (3-4 cm)
  • 140 g onions quartered then layers separated
  • 2 carrots sliced (1 cm)
  • 350 g macaroni pasta
  • ¼ tsp garlic granules
  • 2 - 3 pinches ground cayenne pepper to taste
  • fresh parsley leaves roughly chopped, for serving
