Ingredients

  • 75 g dry vermouth or Madeira wine
  • 100 g pouring (whipping) cream
  • 60 g brown onion, cut into halves
  • 1 garlic clove
  • 2 tsp seeded wholegrain mustard
  • 1 tsp hot English mustard
  • 2 tsp Chicken stock paste (see Tips)
  • 1 tsp salt, to taste
  • 1 pinch ground black pepper, to taste
  • 450 g pork fillet, cut into thin slices (1 cm)
  • 100 g fresh mushrooms, cut into slices
  • 2 tsp crème fraîche
  • 2 - 3 tsp cornflour
  • 1 - 2 sprigs fresh flat-leaf parsley, leaves only, chopped for garnishing
