Ingredients

  • 20 g extra virgin olive oil plus extra to grease
  • 4 mixed capsicums cut in half lengthways and seeds removed
  • 80 g Parmesan cheese cut into pieces (2 cm)
  • 80 g red onion cut into halves
  • 2 garlic cloves
  • 2 tsp dried oregano
  • 1 tsp dried chilli flakes mild
  • 250 g turkey mince
  • 30 g tomato paste
  • ½ - 1 tsp sea salt to taste
  • ¼ tsp ground black pepper
  • 400 g can cannellini beans rinsed and drained
  • 80 g feta cheese crumbled
  • 40 g pitted Kalamata olives sliced
  • 2 tomatoes deseeded and diced
  • 250 g cherry tomatoes to serve
  • 100 g mixed salad leaves to serve
  • 2 tsp balsamic vinegar
  • fresh basil leaves to garnish
