Ingredients

Green Miso Dressing

  • 2 garlic cloves
  • 1 inch fresh ginger peeled, sliced
  • 2 spring onions trimmed and cut into thirds
  • 4 oz fresh baby spinach
  • 2 oz fresh cilantro leaves and tender stems
  • 2 tbsp white miso (or shiro miso)
  • 2 tsp sesame oil
  • 2 oz freshly squeezed lemon juice

Chicken Salad

  • 52 oz water
  • 14 oz chicken breast fillets, boneless, skinless cut into 8 pieces
  • 12 oz asparagus trimmed, halved lengthways and cut into halves
  • 9 oz snow peas trimmed and julienned
  • 4 oz frozen edamame thawed
  • 6 oz soba noodles, dried
  • 2 Lebanese cucumbers trimmed, cut into halves and thinly sliced
  • 1 spring onion thinly sliced
  • 1 lemon cut into wedges, to serve
