Ingredients

  • 700 g lamb shanks, fat trimmed, cut in cubes (3 cm)
  • 2300 g water
  • 10 garlic cloves
  • 30 g fresh ginger
  • 2 fresh green chillies, deseeded
  • 150 g red onion, cut in halves
  • 100 g shallots
  • 50 g ghee
  • 2 tsp cumin seeds
  • 10 cloves
  • 2 dried bay leaves
  • 1 tsp ground black pepper
  • 5 cardamom pods
  • 2 fresh lemongrass, white part only
  • 3 star anise
  • 25 g kurma mix powder, store-bought or homemade (see tips)
  • 200 g tomatoes, cut in wedges
  • 150 - 200 g potatoes, cut in cubes (2 cm)
  • 1 tsp ground turmeric
  • 2 tsp salt, adjust to taste
  • 2 tsp chicken stock powder
  • 2 - 5 bird's eye chillies (chilli padi), cut in halves
  • 30 g fried shallots, to garnish
  • 5 stalks fresh coriander, leaves only, chopped, to garnish
  • 5 stalks Chinese celery, leaves only
  • 2 sprigs spring onions, thinly sliced, to garnish
