Ingredients
- 2 siung bawang putih
- 40 g bawang merah
- 10 g jahe tua, iris tipis-tipis
- 1 batang kayu manis
- 1 bunga lawang

- 600 g paha ayam utuh, (berkisar 2 paha ayam), sebaiknya ayam kampung, potong kecil-kecil (4-5 cm)
- 8 jamur shitake kering, direndam hingga lunak, batang dibuang

- 3 kerang kampak kering (dried scallop), ukuran besar, direndam hingga lunak
- 6 abalon, ukuran kecil, direndam dan dibersihkan (lihat tips)
- 1 sdm saus tiram
- 2 sdm kecap asin
- 1 ½ sdt garam
- 1 ½ sdt kecap hitam
- 1100 g kaldu ayam cair
- 200 g teripang kering, direndam hingga lunak dan dibersihkan, potong kecil-kecil
- 15 g arak masak (Chinese rice wine/Shaoxing Hua Tiao)
- 50 g kuntum brokoli, direbus
