Ingredients

  • 2 siung bawang putih
  • 40 g bawang merah
  • 10 g jahe tua, iris tipis-tipis
  • 1 batang kayu manis
  • 1 bunga lawang
  • 20 g minyak goreng
  • 600 g paha ayam utuh, (berkisar 2 paha ayam), sebaiknya ayam kampung, potong kecil-kecil (4-5 cm)
  • 8 jamur shitake kering, direndam hingga lunak, batang dibuang
  • 500 g air
  • 3 kerang kampak kering (dried scallop), ukuran besar, direndam hingga lunak
  • 6 abalon, ukuran kecil, direndam dan dibersihkan (lihat tips)
  • 1 sdm saus tiram
  • 2 sdm kecap asin
  • 1 ½ sdt garam
  • 1 ½ sdt kecap hitam
  • 1100 g kaldu ayam cair
  • 200 g teripang kering, direndam hingga lunak dan dibersihkan, potong kecil-kecil
  • 15 g arak masak (Chinese rice wine/Shaoxing Hua Tiao)
  • 50 g kuntum brokoli, direbus
