  • 350 g Chinese rice wine (Shaoxing Hua Tiao)
  • 1 ½ tsp salt
  • ½ tsp sugar
  • 3 cm fresh ginger, cut in thin strips
  • 150 g water
  • 10 g black rice vinegar (optional)
  • 10 Chinese red dates, rinsed and pitted
  • 10 g dang gui (Chinese angelica root), cut in slices
  • 1 tbsp wolfberries (goji), soaked to soften
  • 2 tsp chicken stock powder
  • 1 sprig fresh coriander, chopped, to garnish
