Ingredients

  • 120 g beef fillet, partially frozen, then cut into thin slices
  • 1 tsp cornflour, plus 1 teaspoon extra
  • 2 cm piece fresh ginger, peeled
  • 20 g vegetable oil
  • 1 tsp Shaoxing wine (Chinese cooking wine)
  • 80 g fresh king oyster mushrooms, cut into matchsticks
  • 150 g silken tofu, cut into thin strips
  • 600 g water, plus 2 tablesoons extra
  • 1 tbsp Chicken stock paste (see Tip)
  • 3 egg whites
  • 2 spring onions/shallots, trimmed and cut into thin slices
  • 10 sprigs fresh coriander, roughly chopped, plus extra for garnishing
  • ½ - 1 tsp salt, to taste
  • ground white pepper, to taste
