Ingredients

  • 150 g hazelnuts
  • 150 g dried apricots
  • 300 g brown onion, cut into quarters
  • 20 g garlic cloves
  • 60 g olive oil, plus extra for drizzling
  • ½ tsp salt
  • 200 g couscous
  • 1 heaped tsp Vegetable stock paste (refer to the recipe in The Basic Cookook)
  • 600 g water
  • 200 g carrots, cut into slices (5 mm)
  • 200 g zucchini, cut into slices (7-10 mm)
  • 150 g red capsicum, cut into pieces (2-3 cm)
  • 100 g frozen green peas
  • 200 g feta cheese, cut into small cubes (5 mm)
  • 2 tsp fresh flat-leaf parsley, chopped, for garnishing (optional)
