Ingredients

Ice cream

  • 100 g dark chocolate, broken into pieces
  • 200 g pouring (whipping) cream
  • 300 g full cream milk
  • 3 egg yolks
  • 80 g white sugar
  • 1 tsp vanilla bean paste
  • 2 tbsp Kahlua® (optional)

Chocolate custard

  • 500 g cold water
  • 2 titanium strength gelatine leaves
  • 100 g dark chocolate, broken into pieces
  • 500 g pouring (whipping) cream
  • 3 tsp instant granulated coffee
  • 1 tsp white sugar
  • 4 egg yolks

Crumble

  • 80 g white chocolate, broken into pieces
  • 20 g unsalted butter
  • 20 g caster sugar
  • 20 g flaked almonds
  • 1 tbsp plain flour
  • 1 tbsp cocoa powder
  • 1 pinch salt

Chocolate sauce

  • 100 g dark chocolate, broken into pieces
  • 100 g pouring (whipping) cream

Assembly

  • 400 g skim milk (see Tips)
  • cocoa powder, for dusting
