TM6® modes make cooking even easier

A mode is an automated function that allows Thermomix® to handle a specific task for you. For example, as a TM31 or TM5 customer you may already be familiar with Turbo, which operates Thermomix® at maximum speed in short bursts, or Dough mode, which mimics the kneading of a professional baker. Thermomix® TM6 offers new modes to further enhance your abilities, and make your daily cooking experience even easier.

Pre-clean

Dreading the washing up after dinner? Pre-clean makes the process of cleaning your bowl easier! Simply place approx. 1000 g water and a drop of washing up liquid or 50 g vinegar in the mixing bowl, then start this intuitive mode. Thermomix® will sense how dirty the mixing bowl is and clean it accordingly; heating it for longer if a caramel recipe has been made, for example. Thermomix® pre-cleaning itself, particularly around the mixing bowl, makes manual or dishwasher cleaning much easier for you.

Kettle

Use the Kettle mode to heat water for a cup of tea. Choose the temperature and Thermomix® will heat it precisely for you, then alert you when it’s ready. Set the temperature to 70ºC for white tea, and 80ºC for green or black tea. Kettle mode is also used for heating water to the exact temperatures needed for the Sous-vide mode, as seen in Masala Hake at 55°C.

Blend

There’s no need for a separate blender when you have a Thermomix® TM6! Perfect for purées, smoothies and soups, the Blend mode will start slowly and gradually increase to full blending speed. Give it a go in our Versatile Smooth Soup.

Slow Cook

Slow cooking in Thermomix® cooks ingredients over a longer period of time, bringing out a much deeper flavour. Economical cuts of meat such as pork shoulder, lamb shoulder and beef brisket, which are typically tough, become soft and succulent after slow cooking in Thermomix® for up to 8 hours. Get started by giving Slow-cooked Lamb Curry or Pulled Pork Buns a go.

Sous-vide

Unleash your inner chef and prepare a culinary masterpiece with the Sous-vide mode. Cook beautifully tender meat, fish, seafood and fruit according to your preferences, and enjoy perfect results every time. Food is vacuum packed in a food-safe, heat-resistant sealed bag, then cooked in a water bath at a precisely controlled temperature. Thermomix® TM6 gives you the ability to increase the temperature in 1°C increments, allowing for better accuracy in your cooking. As well as allowing the food to cook gently without losing any flavour or moisture, this technique also helps it retain all nutrients and vitamins.

There are two ways to seal the bags; manually by water immersion with heat-resistant zip lock bags, or using a vacuum sealer. Try Duck breast à l`orange or Teriyaki chicken thighs to begin your Sous-vide journey.

Fermentation

There are numerous health benefits associated with yoghurt, and with Thermomix® TM6 it’s easy to make your own. As well as homemade yoghurt, the Fermentation mode is great for proving a yeast dough in the Varoma dish. Set the time for up to 12 hours with a temperature between 37-70ºC. Use constant temperatures to ferment directly in the mixing bowl, or to create a warm environment in the Varoma placed above water in the mixing bowl. To get started making your own yoghurt, have a look at Plain yoghurt in Varoma.

When using water and salty liquids as part of the longer cooking modes (Slow Cook, Sous-vide, Fermentation) it’s important to add an acidic ingredient to the water (e.g. lemon juice or vinegar) to prevent the possibility of oxidation with longer term use.

Closed modes

In addition to the open modes that can be seen when you swipe the home screen, you’ll find the High Temp. mode and the Sugar Stages mode inside Guided Cooking recipes. These two closed modes are directly linked to recipes, as success is guaranteed only with the use of specific ingredients and amounts.

These closed modes offer an enhanced Thermomix® cooking experience; developing richer flavours and enabling new cooking techniques to make your finished dishes even more delicious.

• Use the High Temp. basic recipes as a base to develop your own recipes. Browned Onions are a great starting point for a stew or slow-cooked pulled pork, and Caramelised Onions make a tasty garnish for homemade burgers. Or, if you’re serving a simple dinner of steamed white fish or chicken breast, a side of stir-fried vegetables would pair perfectly.

• With the Sugar Stages mode, you can heat sugar in different ways and to different temperatures with Thermomix®. Try making the Honeycomb and dipping it in melted chocolate, or use pieces as a topping on your favourite chocolate cake. The Caramel Sauce is particularly delicious drizzled over pancakes or as a topping for vanilla ice cream!
