Pizza with red pepper sauce, spinach and eggs

Pizza dough

• 30 g olive oil, plus extra for greasing
• 220 g water
• 1 tsp sugar
• 2 tsp dried instant yeast

Topping and assembly

• 240 g medium-hard cheese (e.g. Gouda, Cheddar etc.)
• 120 g onions, cut into quarters
• 200 g red peppers, cut into pieces

• 250 g tomato passata
• 30 g tomato purée
• 1 tsp fine salt
• ¼ tsp freshly ground black pepper
• 1 tsp smoked paprika powder

• 1 pinch ground cayenne pepper
• 1 tsp sugar
• plain flour for dusting and rolling
• 300 g frozen chopped spinach, defrosted and well-drained
• 4 eggs
