Ingredients

  • 150 g shallots
  • 250 g red onions cut in halves
  • 50 g garlic cloves
  • 20 g fresh ginger
  • 5 stalks fresh lemongrass white part only
  • 25 g fresh galangal
  • 20 g fresh turmeric
  • 7 bird's eye chillies adjust to taste (optional)
  • 20 g dried red chillies (approx. 25 chillies), deseeded, soaked to soften
  • 65 g kerisik (toasted coconut paste)
  • 500 g first draw coconut milk (thick)
  • 60 g gula Melaka (palm sugar)
  • 3 fresh turmeric leaves tied into knots
  • 1200 g beef tenderloin cut in 5 cm pieces
  • 1 - 2 tsp salt adjust to taste
