Gin and finger lime granita

  • 40 g gin
  • 200 g tonic water
  • 1 - 2 finger limes, pearls only, plus extra to serve

  • 3 titanium strength gelatine leaves
  • 150 g caster sugar, to taste
  • 2 limes, zested, no white pith
  • 300 g pouring (whipping) cream
  • 300 g buttermilk

Lime syrup

  • 40 g lime juice
  • 120 g caster sugar
  • 20 g water
