Ingredients

Sriracha® and sesame mayonnaise

  • 30 g sesame oil
  • 175 g vegetable oil
  • 1 egg yolk
  • 1 tsp Dijon mustard
  • 30 g Sriracha® sauce
  • 20 g white vinegar
  • 1 pinch sea salt

Prawn toasts

  • 30 g panko breadcrumbs
  • 20 g black sesame seeds
  • 20 g white sesame seeds
  • ⅛ tsp sea salt, to taste
  • 1 garlic clove
  • 1 ½ cm piece fresh ginger, peeled and cut into slices
  • 1 spring onion/shallot, trimmed and cut into thirds
  • 1 sprig fresh coriander, leaves only
  • 250 g raw king prawns, peeled and deveined
  • 1 egg white
  • ½ tsp white sugar
  • ½ tsp sesame oil
  • ½ tsp soy sauce
  • 5 slices white bread (thick slices)
  • 1 egg
  • oil, for deep frying (enough for 10-12 cm deep - see Tips)
