Ingredients

Salsa

  • 40 g onions, quartered
  • 5 sprigs fresh coriander, cut in pieces
  • 1 garlic clove (optional)
  • 1 fresh jalapeño chilli, halved, deseeded (optional)
  • 200 g cherry tomatoes, halved, seeds removed
  • 20 g lime juice
  • 1 avocado (approx. 140 g), quartered
  • ½ tsp fine sea salt
  • 2 pinches ground black pepper

Scrambled Eggs and Assembly

  • 40 g onions, quartered
  • 10 g olive oil, plus 1 Tbsp for frying
  • 100 g red pepper (approx. 1 pepper), quartered
  • ¼ tsp dried thyme
  • ¼ tsp dried oregano
  • ¼ tsp garlic powder
  • ¼ tsp ground cayenne pepper
  • ¼ tsp paprika
  • 1 pinch dried chilli flakes (optional)
  • 2 pork sausages, halved lengthways (see tip)
  • 4 large eggs
  • ¼ tsp fine sea salt
  • 1 pinch ground black pepper
  • 15 g unsalted butter, diced
  • 50 g semi-skimmed milk
  • 4 flour tortillas, wholewheat
  • 2 Tbsp fresh coriander leaves, roughly chopped, for garnishing
