Ingredients

Dough

  • 60 g water
  • 2 ¼ tsp dried instant yeast
  • 420 g strong white bread flour, plus extra for dusting
  • 35 g olive oil, plus extra for greasing
  • 1 large egg
  • 1 tsp garlic powder
  • 1 ½ tsp fine sea salt

Pesto

  • 250 g mozzarella, cut in pieces (2 cm)
  • 40 g pecorino cheese, cut in pieces (2 cm)
  • 10 g pine nuts
  • 40 g fresh basil leaves
  • 70 g extra virgin olive oil
  • 2 garlic cloves
  • ½ tsp fine sea salt

Assembly

  • 1 medium egg, mixed with 1 Tbsp water
  • 120 g passata
  • ½ tsp garlic powder
  • ½ tsp dried oregano
  • ¼ tsp ground black pepper
