Ingredients

Cakes

  • olive oil spray, for greasing
  • 100 g pecan nuts
  • 400 g feijoas (approx. 5 feijoas), peeled and cut into pieces (see Tips)
  • 4 eggs
  • 350 g caster sugar
  • 350 g grapeseed oil
  • 1 tsp ground cinnamon
  • ½ tsp mixed spice
  • 450 g plain flour
  • 1 ½ tsp bicarbonate of soda
  • 1 pinch salt
  • 440 g canned crushed pineapple, drained (approx. 230 g after draining)

Filling

  • 20 g stem ginger (see Tips)
  • 400 g feijoas (approx. 5 feijoas), peeled and cut into pieces (2-3 cm)
  • 50 g caster sugar
  • 1 orange, zest only, no white pith

Frosting

  • 20 - 30 g stem ginger, to taste (see Tips)
  • 200 g unsalted butter, softened
  • 500 g cream cheese, softened
  • 150 g icing sugar
  • 1 orange, zest only, no white pith
