  • 30 - 50 g milk, for soaking the bread
  • 40 g Parmesan cheese, cut into pieces (3 cm)
  • 300 g turkey breast fillet, skinless, cut into pieces
  • 150 g lentils, canned, drained (weight after draining) (see tip)
  • 2 eggs
  • 50 g pancetta, cut into pieces
  • 1 pinch fine salt
  • 80 g plain flour
  • oil for deep-frying
