Ingredients

  • 50 g brown onion
  • 2 garlic cloves
  • 1 fresh red chilli, trimmed and cut into halves, deseeded if preferred
  • 30 g olive oil
  • 250 g long grain rice
  • 2 tbsp Vegetable stock paste (see Tips)
  • 1 tbsp tomato paste
  • 1 tsp sweet paprika
  • 600 g water
  • 180 g fresh tomatoes, blanched, skins removed, deseeded and cut into cubes (approx. 1 cm - see Tips)
  • 50 g carrot, peeled and cut into cubes (approx. 1 cm)
  • 50 g frozen green peas
  • 2 sprigs fresh coriander, leaves only, cut into pieces
