Ingredients

Base Layers

  • 100 g unsalted butter, diced, plus extra for greasing
  • 250 g digestive biscuits (dark chocolate topped)
  • 2 Tbsp coffee grounds (see tip)
  • 250 g espresso, brewed, cold
  • 60 g sweet Marsala wine
  • 60 g brandy
  • 18 - 20 sponge finger biscuits (depending on size)

Filling

  • 250 g double cream
  • 220 g caster sugar
  • 5 gelatine leaves
  • 750 g cream cheese
  • 2 tsp vanilla bean paste
  • 500 g mascarpone
  • 30 g brandy

Topping

  • 175 g dark chocolate (70% cocoa solids), small pieces or callets
  • 385 g double cream
  • 55 g caster sugar
  • 200 g mascarpone
  • 2 Tbsp dark chocolate shavings, for garnishing
  • 1 Tbsp cocoa powder, for garnishing
