Stuffed Tomatoes and Rice

  • 4 beef tomatoes (approx. 1000 g)
  • 1 onion, quartered
  • 1 garlic clove
  • 50 g carrots, cut in pieces
  • 50 g red peppers, cut in pieces

  • 150 g beef mince
  • 1 ½ tsp fine sea salt
  • 1 tsp sweet paprika
  • ¼ tsp ground black pepper
  • ½ tsp dried oregano
  • ½ tsp dried thyme
  • 20 g breadcrumbs
  • 125 g mozzarella, cut in slices (5 mm)
  • 1 vegetable stock cube (for 0.5 l)
  • 160 g rice
  • 1200 g water

Cashew and Basil Sauce

  • 100 g cashew nuts
  • 20 g fresh basil
  • ½ tsp fine sea salt
  • 2 pinches ground black pepper
  • ½ tsp sugar
  • 10 g lemon juice
