Ingredients

Courgettes

  • 200 g Parmesan cheese, cut in pieces that fit in feeder
  • 700 g courgettes, unpeeled, washed, ends removed (see tip)
  • 1 ½ tsp fine sea salt

Bolognese Sauce

  • 80 g onions, quartered
  • 80 g carrot, peeled, cut in pieces (3 cm)
  • 80 g celery, cut in pieces (3 cm)
  • 40 g olive oil
  • 800 g mixed mince, broken in pieces, (e.g. 400 g pork, 400 g beef)
  • 100 g white wine, dry
  • 400 g tinned chopped tomatoes
  • 30 g tomato purée
  • 1 ½ tsp fine sea salt
  • 1 tsp ground black pepper

Béchamel Sauce

  • 60 g unsalted butter, diced
  • 110 g plain flour
  • 750 g whole milk
  • 1 tsp fine sea salt
  • ¼ tsp ground black pepper
  • 3 pinches ground nutmeg
