  • 500 g chicken thigh fillets, cut into pieces (approx. 2-3 cm)
  • 1 ½ - 2 tbsp taco seasoning (see Tips)
  • 80 g onion, cut into halves
  • 1 garlic clove
  • 1 - 2 jalapeño chilli, trimmed and cut into halves, deseeded if preferred
  • 20 g extra virgin olive oil
  • 150 g green capsicum, cut into pieces (approx. 1 cm)
  • 400 g canned chopped tomatoes
  • 1 tsp Chicken stock paste (see Tips)
  • 650 g water
  • 100 g grated cheddar cheese, to serve
  • 1 avocado, flesh only, sliced, to serve
  • 80 g sour cream, to serve
  • fresh coriander leaves, to serve
