  • hot water, for soaking
  • 1 garlic clove
  • 3 - 5 cm piece fresh ginger, peeled
  • 2 fresh shiitake mushrooms
  • 50 g pork fillet, cut into pieces
  • 1 tsp vegetable oil
  • 1 tsp dried chilli flakes
  • 1 tbsp Shaoxing wine (Chinese cooking wine)
  • 1 tsp dark soy sauce
  • 2 tbsp light soy sauce
  • 1 tbsp white sugar
  • 60 g water
  • 1 spring onion/shallot, trimmed and cut into thin slices
