Ingredients

Plum Sauce

  • 100 g dried candied plums, pitted
  • 5 garlic cloves
  • 2 tsp soy sauce
  • 2 Tbsp sugar
  • 1 piece tangerine peel (1 cm x 4 cm), soaked until soft then chopped
  • ¼ tsp fine sea salt
  • 10 g fresh root ginger, peeled, cut in round slices (2 mm)
  • 300 g water
  • 1 tsp cornflour, mixed with 1 Tbsp water

Prawn Patties

  • 600 g raw prawns, peeled, deveined
  • 70 g pork mince, broken in pieces
  • 1 medium egg
  • 1 tsp sugar
  • 1 tsp sesame oil
  • 2 pinches ground black pepper
  • 120 g strong white bread flour, plus extra for dusting
  • vegetable oil, for frying
    or sunflower oil, for frying
