  • 1 vegetable stock cube (for 0.5 l)

  • 420 g tinned black beans (drained weight)
  • 200 g tinned sweetcorn (drained weight)
  • 4 spring onions, sliced (2 mm)
  • ½ avocado, diced (1 cm)

  • 10 g fresh coriander, leaves only, plus 6 sprigs for garnishing
  • 1 fresh jalapeño chilli, halved, deseeded
  • 1 fresh red chilli, halved, deseeded
  • ½ tsp English mustard

  • 1 tsp fine sea salt
  • ½ tsp ground black pepper
