Ingredients

Pancakes

  • 250 g plain flour
  • 300 g milk
  • 30 g olive oil
  • 5 medium eggs
  • ½ tsp fine sea salt

Spinach and Cheese Filling

  • 2 garlic cloves
  • 50 g onions, quartered
  • 30 g olive oil
  • 500 g frozen spinach, thawed, well drained
  • 40 g crème fraîche
  • 1 tsp fine sea salt
  • ½ tsp ground white pepper
  • 1 pinch ground nutmeg
  • 60 g pine nuts, for garnishing

Mexican Filling

  • 1 - 2 fresh chillies, to taste, halved
  • 100 g onions, quartered
  • 30 g olive oil, plus extra for cooking
  • 400 g beef mince, broken in pieces
  • 700 g tinned chopped tomatoes
  • 2 tsp fine sea salt
  • 1 tsp sugar
  • 1 tsp sweet paprika
  • ½ tsp Tabasco® sauce
  • ½ tsp ground black pepper
  • 140 g tinned sweetcorn, drained
  • 120 g tinned kidney beans, drained
  • 100 g feta cheese, diced
