  • 125 g wonton wrappers, cut on the diagonal to form triangles
  • olive oil spray, for coating

Pork mince

  • 100 g mozzarella cheese, cut into pieces (3 cm)
  • 100 g cheddar cheese, cut into pieces (3 cm)
  • 20 g peanut oil
  • 2 garlic cloves
  • 3 cm piece fresh ginger, peeled
  • 1 fresh long red chilli, trimmed and deseeded, if preferred
  • 500 g lean pork mince
  • 1 tsp sugar
  • 20 g soy sauce
  • 40 g hoisin sauce
  • 20 g oyster sauce

Asian salad

  • ¼ red cabbage, finely shredded (approx. 200 g)
  • 2 spring onions/shallots, trimmed and cut into thin slices
  • 4 sprigs fresh coriander, leaves only
  • 1 avocado, flesh only, cut into bite-size pieces
  • ½ lime, juice only
  • 1 tbsp rice wine vinegar
  • 1 tsp sesame oil
  • sea salt, to taste
  • ground black pepper, to taste
  • 1 - 2 fresh jalapeño chillies, trimmed to taste, to serve (see Tip)
