  • 250 g white sugar
  • 1070 g water
  • 30 g unsalted butter, chilled and added to mixing bowl in 1 piece (approx. 6 x 4 x 1 cm)
  • 1 tsp lemon juice (see Tips)
  • 50 g vinegar

Maple Ice Cream

  • 1 vanilla bean pod and seeds
  • 40 g full cream milk
  • 400 g pouring (whipping) cream
  • 180 g pure maple syrup
  • 30 g glucose syrup
  • 6 egg yolks
  • 1 pinch salt (optional)
