  • 700 g Chinese cabbage (wombok), cut into halves lengthways, then cut into thirds
  • 2500 g water
  • 150 g sea salt
  • 30 g fish sauce or coconut aminos (see Tips)
  • 10 g piece fresh ginger, cut into slices
  • 4 garlic cloves, peeled and cut into slices
  • 2 carrots, cut into pieces
  • 1 pear, cored and cut into slices
  • 4 spring onions/shallots, trimmed and cut into thirds
  • 2 tbsp shiro (white) miso paste
  • 70 g chilli broad bean paste
