Ingredients

Bagels

  • olive oil, for greasing
  • 920 g water, plus 1 Tbsp for egg wash
  • 250 g whole milk
  • 1 Tbsp raw sugar
  • 3 tsp dried instant yeast
    or 30 g fresh yeast, crumbled
  • 520 g strong white bread flour, plus extra for dusting
  • 3 tsp fine sea salt
  • 1 egg yolk
  • 1 Tbsp sesame seeds, white, for sprinkling (optional)
    or 1 Tbsp poppy seeds, for sprinkling (optional)

Bacon Jam

  • 3 garlic cloves
  • 200 g red onion, cut in eighths
  • 500 g smoked bacon, cut in pieces (1-2 cm)
  • 150 g strong brewed coffee
  • 60 g cider vinegar (apple)
  • 60 g orange juice
  • 1 Tbsp Worcestershire sauce
  • 2 Tbsp brown sugar
  • 1 tsp orange peel, zest only, finely grated
  • 1 tsp dried thyme
  • ¼ tsp ground ginger
  • 1 star anise
  • 2 pinch ground black pepper, to taste
  • 40 g whisky, bourbon

Eggs

  • olive oil, for greasing
  • 500 g water
  • 4 eggs (depending on number of servings)
