Ingredients

Burger buns

  • 50 g water
  • 10 g fresh yeast
  • 50 g milk
  • 15 g caster sugar
  • 250 g plain flour
  • 2 eggs
  • 40 g butter
  • 1 pinch fine salt
  • 1 tbsp sesame seeds

Barbecue sauce

  • 30 g shallots
  • 1 garlic clove
  • 15 g olive oil
  • 1 pinch ground cayenne pepper
  • 50 g brown sugar
  • 125 g tomato passata
  • 2 tbsp mustard
  • 1 tbsp lemon juice (optional)
  • 1 tsp Worcestershire sauce
  • 1 tsp cornflour (starch)

Tex-mex burgers

  • 100 g onions, cut into halves
  • 1 garlic clove
  • 25 g olive oil
  • 2 tsp Mexican spice mix or any other spice mix of choice
  • 1 pinch ground cayenne pepper
  • 150 g tomatoes, diced
  • 50 g canned sweetcorn kernels, drained
  • 600 g beef mince, formed into 5 burger patties
  • 6 slices Emmental cheese or any other medium-hard cheese (e.g. cheddar, gouda)
  • 30 g salad leaves, for garnishing
