Ingredients

  • 200 g red onions, cut in thin slices (1-2 mm)
  • 30 - 40 g red wine vinegar, to taste
  • 10 g fresh parsley, leaves only
  • 50 g extra virgin olive oil
  • ½ garlic clove (optional)
  • 40 g lime juice, freshly squeezed,
  • ½ tsp salt, plus extra to taste
  • 1 pinch ground white pepper
  • 300 g water
  • 500 g large raw prawns, peeled and deveined (approx. 1 kg prawns in their shells)
  • 1 - 2 limes, cut in slices (2-3 mm)
  • 200 g fennel bulb, cut in thin slices (1-2 mm)
  • 400 g cherry tomatoes, cut in halves
