  • 30 g orange juice, freshly squeezed

Round Sponge

  • 120 g unsalted butter, soft
  • 120 g caster sugar
  • 2 large eggs
  • 120 g self-raising flour
  • ¼ tsp baking powder
  • 1 orange, finely grated zest only
  • 15 g orange juice, freshly squeezed

Icing

  • blue food colouring gel
  • 1000 g fondant icing
  • water, for brushing
  • 300 g unsalted butter, soft
  • 600 g icing sugar
  • 1 orange, finely grated zest only
  • 1 orange, juice only
  • 100 g blueberry jam (see tip)
    or blackcurrant jam (see tip)

Decoration

  • silver decorating balls and sparkling snowflakes
  • silver edible glitter
