Ingredients

Soup (jelly)

  • 200 g bacon, cut into pieces
  • 2 slices fresh ginger (1 cm), peeled
  • 2 spring onions/shallots, trimmed and cut into pieces
  • 400 g water
  • ½ tsp salt
  • ¼ tsp ground white pepper
  • 1 ½ tsp gelatine powder

Dough

  • 240 g baker's flour
  • 120 g plain flour
  • 350 g boiling water
  • 1 tbsp oil

Filling

  • 3 spring onions/shallots, trimmed and cut into pieces
  • 20 g fresh ginger, peeled
  • 200 g pork mince
  • ½ tsp salt
  • ¼ tsp ground white pepper
  • 1 tsp soy sauce
  • 1 tbsp Chinese cooking wine
  • 100 g shrimp (small), peeled (see Tips)

Assembly and cooking

  • oil, for greasing
  • plain flour, for dusting
  • 500 g boiling water
