Ingredients

Marinade

  • 80 g ginger wine
  • 500 - 600 g pork fillet, trimmed and cut in strips (1 x 10 cm)
  • 2 Tbsp hoi sin sauce
  • 1 tsp olive oil

Black bean sauce

  • ½ - 1 long red chilli, deseeded if preferred (optional)
  • 2 garlic cloves
  • 400 g tinned black beans
  • 60 g soy sauce
    or 60 g Tamari sauce
  • 1 tsp sesame oil
  • 1 Tbsp Shaoxing rice wine
    or 1 Tbsp dry sherry
  • 80 g water
  • 1 tsp palm sugar (1 cm cube), grated

Rice and vegetables

  • 300 g white rice
  • 900 g water
  • 1 bunch tenderstem broccoli (approx. 180 g), trimmed and cut in thirds
  • 230 g tinned bamboo shoots, rinsed and drained (weight is pre-draining)
  • 1 spring onion, trimmed and thinly sliced, for garnishing
  • 1 - 2 sprigs fresh coriander, leaves only, for garnishing
