Ingredients

Parmesan Bread Crumbs

  • 30 g Parmesan cheese
  • ⅛ tsp black peppercorn
  • 85 g panko breadcrumbs
  • 1 tbsp parsley, dried

Caesar Dressing

  • 60 g Parmesan cheese, cut into pieces
  • ⅛ tsp black peppercorn
  • 2 garlic clove
  • 115 g neutral oil, e.g. grapeseed, canola, vegetable
  • 2 egg yolks, from pasteurized eggs
  • 2 - 3 anchovy fillet, preserved in oil
  • 30 g lemon juice
  • 1 tbsp water
  • 1 tsp Dijon mustard
  • ⅛ tsp salt, optional

Salad

  • 140 g cavolo nero, center rib removed, sliced (1 in.)
  • 15 g lemon juice
  • Parmesan cheese, shaved, to garnish
  • black pepper, freshly ground, to garnish
  • lemon, cut into wedges, to serve
